Coconut Kefir

Ingredients:

  • Coconut water

    Milk kefir grains (Tibetian Kefir grains)

Pour the coconut water into a sterilised jar. Add the kefir grains and cover with cheesecloth. Stand at room temperature for 8-24 hours, until the coconut water develops a pleasant sour taste. Enjoy!


Milk kefir grains - miniature grains looking like cauliflower - are a combination of healthy bacteria and yeast, which feed on lactose (the sugars in milk). It is important that the kefir grains are rested in dairy milk every once in a while in order to maintain their strength, health and structure. Grains can be rinsed under cold water when transferring from dairy milk to coconut water.
